So what do you do when you open your fridge and all you see is -
- 2 limes
- half an onion, 1 jalapeño
- and a delicious local organic chicken from Richardson Farms Rockdale, Tx (purchased at in.gredients my fav grocery store)
I’ll tell you what – you MacGyver 2 delicious paleo meals *no need for paper clip, ballpoint pen, or tweezers
Roasted Lime Jalapeño Chicken
and after we gobble it up…
We don’t throw away our $18 dollar carcass… nooo
We make some nutritious chicken stock!
that will be used for chicken and wild rice soup, and lentils (so technically, 3 meals) (not paleo but that still nutritious, so i don’t care)
Recipe for Roasted Chicken
1 jalapeño
half onion or more you do whatever you want
carrots, if you want
2 limes
organic unsalted butter
garlic
3-4 lb Pasture Raised Chicken – Very important for your stock – chickens raised in pastures have access to bugs & grass instead of just grain & corn like conventional chickens.
I’ll put it another way, to be a healthy human we are encouraged to eat a good balance of proteins, fiber, carbs and fat, right?
Well, same applies to chickens! they need grass, worms, flies, vegetables – not just corn &grain!
And the taste, is without a doubt different… it’s richer, and hearty. The actual meat is tender and fresh. Truuust me.
Anyway…. Preheat your oven to 425 degrees, and start rubbing your chicken with about a tablespoon of butter, all over (btw, I’ll rub salt on my chicken inside and outside around noon or in the morning and then i leave it in the fridge – this makes the chicken crispier yet juicy.)
Cut your limes put 2 halves inside the chicken, along with garlic if you have any, as much as you want, i like 4 cloves, the more the tastier. Cut up jalapeno, carrots, and onion and spread around the sides of the chicken. Grind some pepp
Throw in the oven and cook for 1.5 hours, take out of the oven, and cover with tinfoil – let it rest for 10 minutes or so.
Cut, add avocado, cilantro and salsa
As a side, go with spring mix, tomatoes, almonds, cranberries, balsamic vin, olive oil, salt and pep
Easy, relatively quick, and good for you.
Once done eating, while someone washes dishes, you remove all the meat from the bones, add all the bones even from leftovers into a slow cooker, set on low for 10 hours… add an onion, carrot, and celery for more taste and nutrition.
In the morning it’s probably been 10 hours, turn off and pour your stock into recycled jars and put in fridge or freezer depending when you want to use.
Next day, use your stock
1 cup of wild rice, cook for 20 minutes on high in your delicious stock….
1 cup stock, 1 cup water – use the rest of your stock for lentils.
When rice is cooked, add any chicken pieces leftover, onion, celery, jalapeño, cabbage – whatever your little heart desires – cook for another 10 min….. salt and pepp…. cilantro to garnish.
And you have the most delicious Chicken and Wild Rice Soup!!!
